to obtain oils whose "essential constituents "(polyunsaturated fatty acids, vitamins) are not altered, avoid undesired overheating.

Virgin oils are obtained only by mechanical process, clarified by physical or mechanical means and do not undergo any chemical treatment or no refining operation.

Refining.
Set of chemical and physical operations that enable crude oil out of the Industrial presses to be consumable.

Degumming
Process : addition of sulfuric acid, washing with hot water, steam injection in the hot oil at 100 ° C, centrifugation, etc..
target: precipitation of albuminous substances, phosphatic, resins and mucilage.

Decolorization
use of bleaching chemicals: potassium dichromate, chlorine dioxide or sodium thiosulphate.

deodorization
Injection of superheated steam (between 220 and 300 °) in the heated oil at high temperature.
